I’m not much of a candy eater. However, my sis and her husband both like candy at Christmas – especially home-made candy. I know I have seen references to sugar-free fudge, but never bothered with the recipe. If anyone has this recipe would you please share with me so I can pass it on to my sis? Thank you. Any other recipes you might have for sugar-free candy would also be appreciated.

I haven’t made any sugar free candies. Splenda says it can replace up to 25% of the sugar in candy – haven’t tried it. I’ve had sugar free chocolate sauce made from Splenda and it was terrible – but many of the sugar free candies you can buy now are very good.

Sugar alcohols (xylitol for example) are supposed to be able to replace bulk of sugar, other than that maybe one needs a thickening agent like pectin if using other sweeteners to get the solidity, not 100% sure, and I know this was not entirely helpful either.

I used to buy a lot of “goodies” from Swiss Colony on line and through their catalogs ( which I still get ) and their sugar free confections, including fudge are very good. Sorry I don’t have a recipe for ya… I haven’t been cooking much lately.
